Baking In Fashion : Rainbow Cupcakes

For a pick-me-up on a gloomy day, these cupcakes will surely do the trick! With the amount of rain we’re seeing (Hello Spring!) we’re all waiting to see rainbows, and summer roll in. There’s nothing like a beautifully decorated cupcake on a grey, dull day. Bring some smiles to your office, your house, or even to a dinner party with these Rainbow Cupcakes.

I actually found this fabulous recipe via a link from StumbleUpon that my cousin had sent me a few years back. I have literally tried every cupcake on the list (all 33) and I often refer to this link for unique, tasty cupcake ideas. These recipes are from Ming Makes Cupcakes website, theres also some uber-scrumptious cookies and savoury recipes available! The recipe I used for the Rainbow cupcakes was Cupcake 22 the Sour Cream Chocolate Cupcakes but instead of Nutella Frosting I used the frosting recipe from Cupcake 4, an average buttercream frosting.

Sour Cream Chocolate Cupcakes 

1 cup flour
1 cup sugar
1/2 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 stick room temp. butter
1/2 cup sour cream
1 egg
1 tsp vanilla

1. Mix flour, sugar, cocoa, baking soda, and salt. Add butter, sour cream, egg and vanilla.
2. Beat until well-blended and fluffy.
3. Bake at 350 for 30 minutes, or until toothpick comes out clean.

Buttercream Frosting

1 stick room temp. butter
2 1/2 cups confectioner’s sugar
1/4 cup milk
1/2 tsp vanilla
a dash of almond extract

1. Beat butter until smooth and creamy.
2. Add sugar, milk, vanilla, and almond extract and beat until spreadable consistency.
3. Add additional sugar if needed.
4. For the rainbow effect you can use food colouring to get a nice light blue, or if you choose you can also leave it white. I used an icing nozzle similar to the one photographed below to get the “cloudy” effect. Top your cupcakes with Rolled Sour Belts in Rainbow just arched and placed into slits you pre-made before the icing. The slits act as a holder to keep your rainbow in place.
